Wecipe Wednesday – Pancake Taco Edition


This month’s recipe comes courtesy of our friend Whitney at Center for Energy and Environment, an energy-efficiency organization with whom we currently share a building! We were talking with Whitney recently and she described a breakfast taco that sounded so interesting, we felt we had to share it.

All of the ingredients can be found at our superb hub hosts The Wedge Co-op and Seward Co-op, in addition to many other grocery stores around town!

Breakfast Tacos a la Whitney

Per taco:

One pancake, whatever your favorite pancake may be

1 scrambled egg

1 maple breakfast sausage or “soysage” if you prefer a meatless option

A small amount of sweet potato hash browns

Layer these ingredients on one half of the pancake.

Top as desired with:

fruit salsa (cook down some berries with a little lemon juice until it’s the consistency of salsa)

spicy whipped cream (make whipped cream as usual, add a little cayenne to your preference; if you use a pre-whipped option, fold the cayenne in gently, or sprinkle a touch on top)

chopped green onion

Fold the taco in half, pick it up and eat!

If you prefer to eat yours burrito-style by tucking in the bottom and overlapping the sides, just go light on the fillings… or make a really huge pancake.
